In Which We Eat Soup....Lots of Soup

Riley's tonsils are killing me.  Literally killing me.  He started getting sick in late January and has been on a steady stream of antibiotics ever since then.  Every 10-12 days or so.  It's fantastic.  Did I mention we have a $25 copayment for office visits and a $10 prescription co-pay? He's had one (insufferable) case of strep throat and I've probably spent $400 on it!

Finally, though, the end appears in sight.  We figured out ($75 worth of throat cultures later) that Savannah and Logan are such good sharers that they're strep carriers! No symptoms, but they just constantly have the germs to pass along to their highly susceptible brother.  Whoohoo! (Plus $30 in prescriptions....dear people on Teen Mom, I have no clue how you afford this on minimum wage)

Riley's going in for a consultation tomorrow for a tonsillectomy and he's super excited because for the last week he's basically eaten nothing but broth, yogurt, and popsicles.  Tonight I made my matzo ball soup for him (not on the menu, but I made chicken salad for lunch since my mom was back in town after her trip to Texas and Colorado and that meant I had broth that needed soup!)  I thought I'd share the recipe. I've kind of made this soup up as I go.  My MIL used to make it for passover using Lipton Noodle Soup (not KFP for those of you that care) and it seemed silly I was eating Matzo instead of bread to have noodles in my soup.  Plus, a certain husband that I love really shouldn't have that much salt (mine still has plenty).  I recently discovered they make a Lipton Matzoh Ball Soup that you can get at Safeway during Passover, but Austin said he likes mine the way it is (score one for me!)

 Matzo Ball Soup:
1 chicken, divided into 8 pieces and skinned
water to cover

2 large carrots, sliced
3 stalks celery, sliced
1/4 of an onion, diced
salt and pepper to taste
2 bay leaves
1/2 cup parsley

2 cups matzoh meal
8 eggs
1/2 cup oil
1/2 cup water
1 teaspoon salt
1 box of chicken stock or 3 bullion cubes

In a large stockpot, place the chicken and enough water to cover by 1 inch.  Simmer until fully cooked.  Remove the chicken.  Use for whatever purpose you'd like, retaining 1 cup, chopped.  Strain the liquid and return to the pot. Add the vegetables, bay leaves, salt, pepper, and additional water (up to 2 cups) if required.  Bring to a simmer until veggies are tender, but still firm.  Add the 1 cup of chicken.  

In the meantime, bring the chicken stock and a matching amount of water and 1 teaspoon of salt to a boil.  While you wait, mix the salt, matzo meal, oil, eggs, and water and let them sit in the refrigerator for 15 minutes (or up to an hour).  When the water boils, use oiled hands to roll balls (I like slightly bigger than a golf ball but some people like baseball sized.  Your call).  Reduce the water to a gentle boil and add balls, allowing to cook for 10 minutes.  Transfer cooked balls to vegetable and chicken soup and add the parsley.  

(Note: Matzo Balls suck up copious amounts of salt and liquid.  If you want to cook them in the same pot as your soup, you'll need 2.5 times the liquid you want to end up with for this number of matzo balls)

Menu Plan Monday (WINNING!!)

Because it's actually Monday and I'm posting this!! I want to be better about giving each of the kids a night to cook and really learn to prepare an age-appropriate meal, so that's reflected here, too.

Monday (Riley)- Pasta with Marinara Sauce, green salad with vinaigrette, Garlic Bread, banana yogurt parfaits
Tuesday- Pork Chops with Apple Ginger Sauce, asparagus, jeweled couscous
Wednesday (Logan)- Macaroni and Cheese, Hot Dogs, Green Beans with onion and garlic, green jello with fruit
Thursday- Tacos, Spanish Rice, Pineapple
Friday (Savannah)- Pizzas, fruit salad, veggies and dip
Saturday- Leftovers
Sunday- Grilled steak, baked potatoes, corn on the cob, watermelon

In Which We Play Twister for Fun and Fotos

I've been writing for a little news service for the past few months which has been really really fun for me because I've always wanted to take my writing out for a spin and see where it took me.  One of the perks of this job was that I got to meet Mary, who is the senior photographer.  She had my kids and me over for some pictures for the business she's starting up and I wasn't so sure how they'd turn out- but they were really fun!  Totally different than the sterile studio portraits we normally get from school, Mary had them play twister with me.


I loved what Mary had to say, too: "Savannah, Riley and Logan are a party all by themselves. I was quite taken with how they genuinely enjoyed playing together."  


We really are lucky to have such great munchkins that love each other deeply.  And, twister pictures- super cute! I think I need a new stacked frame to display these!!

Menu Plan Monday- Late Again

Monday- Broccoli Stir Fry with Orange Sauce, steamed white rice with mixed veggies
Tuesday- PTA Dinner- Vegetarian Lasagne, Garlic Bread, Salad, Cheese Cake (from Tera!) and Pizza for the kiddos
Wednesday- Work: Crock Pot Chicken Parisienne
Thursday- Leftovers
Friday- Game night with friends, assorted munchies, ice cream sundaes
Saturday- Grilled steaks, grilled asparagus, garlic mashed
Sunday- Chicken Salad with fruit

In Which We Love One Another

After a particularly long night and particularly long day with two cranky preschoolers who were NOT SLEEPY, I gave in and put a movie on.  Savannah snuggled up on my leg (that's my corduroy skirt pictured here) and asked her "Lowg Lowg" (this is my best guess at how to spell her pet name for Logan) to snuggle her.  Despite the fact that they'd been picking at each other all day, he nestled in, too, and gently rubbed her head until he fell asleep, too.

I hope my kids are always close- I know it won't be like this, but I hope that somewhere deep in their minds they remember moments like this, even as grown ups.

In Which We Howl at the Moon

Riley has absolutely adored cub scouts this year.  It's right up his alley- a dash of everything and lots of crafts and field trips thrown in.  When our original baseball coach moved practice so that it would overlap with scouts, I was amazed that Riley had the dedication to say that he'd rather switch teams than skip scouts- especially since he committed to scouting first.  Love that kid.  This week he got to move up from Tiger Scouts to Wolf Scouts.  (Hence the howling).  This momentous occasion was marked with a new handkerchief.  Yellow, this time, instead of orange.  It's my favorite one because it matches :)
 Riley has a lot of fantastic kids in his den.  It's a really fun (and HIGH ENERGY!!!) group of boys and I think they've had a really great introduction to scouting thanks to their leaders!!
Against my better judgement, here's me and my boy.  This year I have not been good to myself and I've gained 15 pounds from stress eating that I really didn't need to gain since I was already quite fat enough, thank you very much.  Hopefully this summer I can take better care of myself and my family since PTA will be done and I won't be shoving wine and brownies down my face every time I have to open another nasty email....hopefully.

Menu Planning Monday (ish)

Part of keeping track of homeschooling next year is going to be journaling what we do in this space.  To that end, I need to get in the habit of writing more religiously...er...faithfully....I need to write more, with or without my Jesus spin ;)

So, to that end, I'm going to start with our Menus.  Several of my friends do this and I love the inspiration.  Cooking will be a part of our curriculum since the kids love to cook and it ties in with math, so each kid will get a day to plan and implement the menu.  For now, it's still me, and it's actually Wednesday....

Hopefully this will also help me plan better.  We have a lot of weeknight happenings that would go smoother if I planned dinner better.  Especially baseball, which happens RIGHT over dinner quite consistently. This is not a typical menu for us- due to Monday's tragic events I had a bunch of thawed chicken.  We don't normally eat this much chicken all at once.


Monday- Frozen Cheese Pizza, Fruit Smoothies with Yogurt, Carrot Sticks and Dip (before Cub Scout Pack Meeting) I had another meal planned, but my freezer died (sadly, yes, but he got better!!) and in the frantic rush to move things from the basement full freezer to the kitchen tiny freezer, this is what my fantastic 7 year old made!!

Tuesday- Linguini alla Vodka, Salad, Garlic Bread (brought by Grammy and Papa to Riley's baseball game)

Wednesday- Chicken with Lemon Caper Sauce, Pasta, Asparagus from the farmer's market (which no one ate but me so breakfast tomorrow will be EPIC)

Thursday- Fatteh bel Djaje, Tabbouleh but with no mint and twice the parsley called for, probably hummus and veggies to go with.  If I am feeling benevolent, we may have some Trader Joe's Baklava :)

Friday- Dinner out for Preschool Graduation!! I plan to cry!!

Saturday- Chicken Lettuce Wraps but with substantially more mushroom and water chestnuts, and sweet chili sauce and hoisin subbing for the hot ingredients where called for for the kids.  Not me, I'll burn my mouth off :)

Sunday- BBQ Chicken, (kidding- we're having grilled burgers and hot dogs), Purple Potato Salad (yay farmer's market!), mixed berries, corn on the cob (whoot, farmers!)

Next week, we eat vegan.  I feel like this week was a bad episode of Epic Meal Time (chicken breast, and chicken breast, and chicken breast, though, rather than BACON STRIPS and BACON STRIPS!)   BTW- If you watch that link, please don't vomit.
